John Pincombe may have died in 1874. I received an email from Lorie Begin with the following information. The ages are off, so I'm not sure. Should check the 1861 Ontario census.

St. John's Anglican Church, Sandwich, Ontario
John Pinkum, 95 years, December 19, 1874. He was a mason, by occupation.
Although John is listed in the St. John's Records, there is no stone for him
in the cemetery. ³
